iCopter shows you everything it has to offer in about two seconds, which is probably about as long as you'll be able to stay in the air for your first dozen or so attempts at flight. Not that the game's lacking anything; in fact its simplicity is its greatest strength.
It never gets easy (my best score is still under 4,000) but it does get easier. The chopper rises when you have a finger pressed against any part of the screen, and falls when you take it away. That's the only control you have as a pilot once you choose a speed from your iPhone's settings menu.
There are two schools of thought concerning iCopter strategy. A friend of mine earns scores significantly higher than mine by feverishly tapping the screen to fly at a steady altitude and making small adjustments to avoid obstacles. However, I think it's much more fun to fly willy-nilly in a sort of sound wave pattern.
The best thing about iCopter is that you can pull it out of your pocket and play even when you have just a minute of free time. Not every game for the iPhone needs to be this simple to be this good, but accessibility certainly doesn't hurt their chances.
